Corn cheddar green chile muffins

I love muffins. Lots of yummy crust, perfectly proportioned for a handy individual serving. I improvised a bit tonight and can up with this little gem. My boys said it was nearly as good as the Black Pepper cheddar muffins I like to make.

Here’s the goods:

1 c yellow cornmeal
1 c unbleached all purpose flour
1/4 c sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1 c. Buttermilk
2 eggs
1/4 c. Butter, melted
1 small can roasted green chilies
1 c. Shredded sharp cheddar

Preheat oven to 400. Grease your muffin tin. Whisk together dry ingredients. In a separate bowl beat together wet ingredients, and then stir with dry until barely moistened. Fold in green chilies and cheese. Fill those muffin cups about 3/4 and bake for about 18-25 min. They should be golden brown. Great with chili! Enjoy!
