Trail Mix Cookies

These are a version of Paula Dean’s “Monster Cookie.”  I reduced the sugar and added trail mix.  These are a great hiking cookie, or after school snack.  Still high in fat, but whole grain and full of protein.  I was introduced to these by my friend Emily….she puts M & M  in them which is also really tasty.

3 eggs

1 1/3 c. packed brown sugar (I reduced the sugar by over a cup–trying to make not quite as evil).

Beat these two ingredients together.  You can use powdered eggs, but if you do just whip the water and sugar together, and add the powdered egg to the dry ingredients.

Add & beat until smooth:

1/2 tsp. salt

1 tsp. vanilla

1 cube softened butter

12 oz. all natural creamy peanut butter

Now add:

4 1/2 c. quick oats (not instant)

2 tsp. baking soda

(powdered egg if you are using it)

1/2 c. 60% dark chocolate chips

1 c. trail mix (the one I used had whole natural almonds, white chocolate chips, dried cranberries, and raisins)

Scoop in tablespoons, 12 on a sheet (large sheet). Bake at 350 for ten minutes.  Let them cool in the pan 5-10 minutes before taking them out.

Maybe there is time to get in one last hike before it gets too cold.  Or, for some of you, maybe it will finally cool off enough that you can actually be outside!
