These are savory muffins which is such a nice change from the typical sweet muffin. I think they are lovely with soup. The muffin top is especially delicious with all the browned cheese. My kids all love this muffin. Some kids are bothered by pepper; if so, you could reduce the pepper in the recipe.
Cheddar Pepper Muffins
2 c. flour
1 T. sugar
1 T. baking powder
1 tsp. coarsely ground pepper
1/2 tsp. salt
1 1/4 c. milk
1/4 c. canola oil
1 egg
1 1/4 c. shredded sharp cheddar, divided
Combine dry, then wet (except cheese), and blend together. Then fold in 3/4 c. cheese. Spoon into muffin tins, and sprinkle the remaining cheese over the tops of the muffins. Bake at 400 degrees for 15-20 min.
You can also sprinkle these with Parmesan, or fold in chopped ham. Sometimes we also stir in some minced garlic. I am sure you could come up with tons of variations!
