Cheater Black Forest Cake

1 chocolate no egg chocolate cake

1/2 c. dark (60%) chocolate chips

1 VERY large can of cherry pie filling (there are two sizes–get the big one)

1 small box instant vanilla pudding, prepared as directed

1 T pure almond extract

2 T pure vanilla extract

1 cup heavy whipping cream


3 cups flour

2 cups sugar

6 T cocoa

2 tsp baking soda

1 tsp salt

Mix dry ingredients (sifting is a good idea) well and then add:

3/4 cup canola oil

2 T vinegar

2 tsp vanilla

2 cups water

Pour batter into a 9 x 13 pan that has been coated with Pam.  Once in the pan, stir in 2/3 cup cherry pie filling and 1/2 c. 60% dark chocolate chips.

Bake at 350 until the middle springs back when touched.

(about 1/2 hour??)

Meanwhile, mix the rest of the cherry pie filling with 1 Tablespoon of pure–not imitation–almond extract.

When the cake is out and is still warm, poke holes in it with a skewer and pour the rest of the pie filling over the cake and spread it all over.

Next, prepare the vanilla pudding as directed on the box, except add 2 tablespoons of vanilla extract (again, pure, not imitation).

Whip one cup of extra heavy whipping cream until stiff.  Fold that into the pudding.

Spread the pudding mixture over the top of the cherries.  Decorate the top with dark shaved chocolate or mini chocolate chips and a few maraschino cherries.

Chill until serving time.
